Banana Bread 1 loaf

350° 60 mins

1/2 c + 2 Tbl   sugar 

1⁄4 cup butter 

1 eggs  

1 1⁄2 cups mashed very ripe bananas (3 to 4 medium)

 1⁄4 cup buttermilk

 1/2 teaspoon vanilla 

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda 

1 cup chopped nuts, if desired 

1/2 teaspoon salt

  • 4 strips Bacon, cooked crispy
  • 1/2 cup Shredded Cheddar Cheese
  • 1 1/2 cup Milled Oatmeal
  • 2 large Eggs
  • Additional Milled Oatmeal


  • 1 sweet potato

  • 2 ½ cups whole wheat flour

  • 2 large eggs

  • ¼ cup unsweetened applesauce

Cream Soup Substitute

INGREDIENTS

  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1/2 cup chicken broth
  • 1/2 cup milk (I used 1%)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  1. In a small sauce pan, melt butter over medium-low heat. Whisk in flour and let cook for 1-2 minutes.
  2. Slowly stir in chicken broth, then milk. Whisk until it begins to thicken. Let it simmer for a few minutes. Season with salt and pepper.

I made this and am happy with the result. I also learned if you put egg on the exposed pie crust it keeps it from burning.

I made this recipe today using 4 egg whites. It turned out good.

Product review: pickles and coffee

 The pickles are dill. The flavor is subtle and not too salty. The pieces are irregular shapes some round some oblong. The oblong shapes expose the seeds. Round pickle slices never feature the seeds like an oblong slice is able to.

The coffee is sweet without sugar. It's a nice change to my regular coffee.

Ingredients

  • 1/2 Cup(s) (1 stick) plus 6 tablespoons butter, softened
  • 3/4 Cup(s) firmly packed brown sugar
  • 1/2 Cup(s) granulated sugar
  • 2 Eggs
  • 1 Teaspoon(s) vanilla
  • 1-1/2 Cup(s) all-purpose flour
  • 1 Teaspoon(s) Baking Soda
  • 1 Teaspoon(s) ground cinnamon
  • 1/2 Teaspoon(s) salt (optional)
  • 3 Cup(s) 
    Quaker® Oats (quick or old fashioned, uncooked)

Cooking Instructions

Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes

Powdered peanut butter cookies

  • 1 cup powdered peanut butter (I use PBFit or PB2)
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/3 cup oil
  • 1 large egg
  • 1 tablespoon ground flaxseed

Preheat oven to 350 degrees F.Combine all ingredients using a hand mixer. Drop by teaspoons onto a Silpat or parchment lined baking sheet. Use a fork to score a criss-cross pattern on each cookie. Bake 12 minutes or until set. (Cookies will be soft and chewy).
